Black-Eyed Pea Pie

Ok this is delicious. Really, really good. Basically a spinach pie but with sausage, and some beans. Yum.

We have a mushroom-disliker in the family, so we skipped the mushroom layer. I used hot Italian sausage instead of chorizo. I used all baby spinach and didn’t remove any stems. It took a few batches in our high-powered blender to get all the spinach in and blended up. Used this recipe for the pie crust.

Yum, will be making again.
