Black Eyed Peas with Cornbread Dumplings

My family loved this. They love most recipes that include sausage, to be fair, but they loved this extra on top.

I followed the recipe closely, other than I was heavy handed with chicken bouillon. The result was almost too salty (I also added salt) so will fix that next time. I boiled the soup on high for quite a while as I made the dumplings to decrease the liquid and soften the beans.

I also doubled the recipe, but didn’t realize till after that meant I was trying to squeeze 2x the dumplings into 1x the cooking pot area. They were squished and basically formed one continuous dumpling layer on top.

Didn’t matter, still cooked fully and tasted delicious.
