Pasta With Blackeye Salsa

This one was different and very good — light and fresh.

Basically just elbow pasta or shells with a light fresh sauce made of tomatoes.

I used the pasta in a mac and cheese container, lemon juice because I didn’t have lime juice, and regular tomatoes because I didn’t have cherry tomatoes. Was really good, and easy, and healthy — will make again.
