My daughter and I aren’t the biggest fans of chickpeas, at least not relative to other beans. Because of this, when lightly contemplating the idea of Focusing On A Single Bean For A Whole Month, it felt smart to assign chickpeas to the shortest month, February.
I’d forgotten how versatile chickpeas are though. In addition to curries and chilis, we’ve got chickpea flour for desserts and fritters, aquafaba for merangues, and black and green chickpeas to explore! The number of chickpea recipes I have queued up for February is…um… a little intense.
Anyway, stay tuned and we’ll see how many we end up making, and we’ll see if we turn in to chickpea converts by the end of the month.
