I almost forgot! This one was a surprise hit! A lot like the other curries we’d had this month, but the lime + coconut milk gave it a different thing going on, very good, and made great leftovers.
I made the Jamaican curry powder from scratch using the recipe on the webpage. I cut it down by half so it didn’t make (much) more than I’d use in the recipe. I was running low on time so didn’t roast the spices and it was still delicious 🙂
