Marinated Black-Eyed Pea Salad

Haven’t eaten many vinegary bean salads yet, but made this one and found it very tasty. Chopped the pepper and onion very small, and skipped the parsley because I’m not much of a fan. Delicious.

Am amused how often bacon is a component of recipes including black-eyed peas, including this salad 🙂

Looking forward to making this again.
