Roasted Black-Eyed Peas

You’ve probably heard of roasted chickpeas, but these give them a run for their money. I’ve made them twice in the last week.

Made one batch with some leftover honey BBQ rub seasoning. They were great. Made another with garlic powder, salt, and pepper. Also great. Made a third with smoked paprika, salt, and pepper. They were ok, but not as good as the other two seasonsngs.

Tip: make sure all the way roasted, till they are crispy. Makes a big difference to the taste and how much fun they are eat with your fingers. They are best the first day.
